Have you ever wondered what makes cold brew coffee different?
The answer is simple, how it is brewed and why that matters. A brewing process that takes longer and requires a different set of temperature parameters than a traditional hot cup of joe.
These differences change the chemical make up of the coffee that is brewed and poured into a cup. Cold brew requires room temp (68degree) water for blooming instead of (205degree) water for hot coffee. It also requires refrigeration for (12-36hrs) for its steeping process.
Why?
The cold temperature of the water releases the oils and flavors of the coffee grinds slower than hot temperature water. This is because the molecular movement between the water and coffee grinds is decreased with colder temperature. This slow molecular movement is extracting the flavors with in the coffee grinds with a more tender approach.
Hot brewed coffee can sometimes burn oils on the grinds causing it to be more bitter. The fast molecular movement can also cause the flavor of the cup to be more acidic and less caffeinated. Cold brewed coffee slowly extracts the oils without burning them causing the cup to be 67% less acidic than a traditional hot cup and 1.5 times more caffeinated. This amazing process allows different flavor profiles to be invented and enjoyed across the globe.
With low acidity and less agitation the coffee tastes smoother and naturally more sweet.
